Thanksgiving dinner, albeit a late one, was the definition of anti-climatic for me this year. As you all may remember, hubby asked me to cook for him and his soldiers this year – 3 of them and 2 of us – 5 in all. I blogged about choosing my recipes and all the preparation and I haven’t said a word since.

I got up before daylight on Saturday morning and put the turkey in brine and made the cheesecake – which turned out to be 3 in all. Same on Sunday morning – up before daylight, put the turkey in the oven, and started prep for the rest of the meal. Then set to tidying the house for guests (read: pickup after hubby who had come home at 1am and literally left a trail of stuff on his way to passing out from exhaustion).

I was a little rushed in the end with the side dishes simply because I think I either underestimated the prep time, or just simply got carried away with the other activities. They didn’t get spoilt or anything, just that I was still cooking when the first guest walked through the door.

Well, the anti-climatic part was the fact that not only did one soldier (and his wife) NOT turn up making this a party put on for ONE, but it rained all day and there was too much food. The whole “event” was over and done with in 30 minutes flat.

I felt so deflated when it was all done, that I pondered the wisdom in even posting the part 2 to this whole project … then I reminded myself that I have an obligation to my readers and so here I am.

At the end of the day, the food was good (still good – dinner now for 2 nights straight) and apparently enjoyed by all. Two things came out of that project: apparently, I cook pretty good – the one guest I had was very interested in any future Sunday cooking I might be doing (cooking in the barracks is forbidden, for those who are wondering). The other thing I learned is: cheesecake is far from difficult to make and I see cheesecakes – many cheesecakes – in my future. :)

And just to top off the post, here is an image of the table laid out with the meal just before we welcomed our first guest in. It looks small, but considering the number of guests we were expecting and actually had, it was perfect.
